no_bake_cookies vegetable: meat: yield (meals * people): prep.: cook: recipe source: Vegan on the Cheap (Chocolate peanut butter oatmeal cookies) 1/3 c vegan margarine 1 c sugar 1/3 c unsweetened plain or vanilla soy milk (I used almond milk) 3/4 c peanut butter (I used pumpkin seed butter) 1 tsp vanilla extract 1 pinch salt 2 c oats 3/4 c vegan semisweet chocolate chips (found them at Aura foods) -Melt the margarine in a saucepan over medium heat -Stir in the sugar and soy milk. Stir constantly until it just comes to a boil. Cook, stirring constantly, for about 1-2 minutes to dissolve the sugar. -Remove saucepan from heat. Stir in peanut butter, vanilla, and salt until well blended. -Add the oats and chocolate chips, stir until well mixed. -Put spoonfuls on baking sheets or plates. -Let sit for 30 minutes.
